Spelt flour dumplings (pierogi) stuffed with taco lentils and onions

 RECIPE:

2- 3 cups organic spelled flour
3/4 cup hot water
1 egg (you can skip this step, the dough will be still good),
1 cup lentils,
Taco mix (a pinch of chili powder, garlic clove, dried peppers, oregano, pepper, salt). You can also use ready-made mix,
1 medium onion,
3 tablespoons canola oil

METHOD:
1. cook lentils in water until soft,
2. chop onion and garlic
3.  pour oil in a frying pan and fry onion and garlic
3. add cooked lentils to frying pan, simmer with spices, fry for 2-3 min, set aside,
4. knead the flour with hot water and an egg,
5. roll out the dough on a pastry board until you reach the thickness of about one-tenth of an inch.
6. cut circles of dough with inverted glass or a cup,
6. in the center of each circle put a spoonful of stuffing,
7. fold it to form dumplings (pierogi)
8. boil in salted water,
For this rules out about 40 pieces

I had a little dough left so I made some noodles. I cut the dough into parallelograms but creativity with shape is welcomed. I cooked it in salted water and served with fried onion.  It is simple but good side dish.
