A little tired of meat dishes I decided to make Chana
Masala – an Indian curry with chickpeas, for lunch. It is a very simple, quick but tasty recipe. Vegetarians
will love it and meet eaters will find it satisfying.
INGREDIENTS:
1 onion, diced
2 cloves garlic, crushed or grated
1 tablespoon fresh grated ginger
1 small red chili pepper, chopped
1 teaspoon cumin beans
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon sweet paprika
1 teaspoon turmeric
1 teaspoon garam masala mix
1 can canned tomatoes
2 cup chickpeas (soaked and cooked)
lemon juice, sugar, salt, black pepper - to taste
Oil - for frying
Fresh cilantro
METHOD:
1. In a saucepan pour some oil and cook onion until
softened,
2. Add ginger, garlic, chili, cumin beans and cook
stirring constantly for 2 minutes,
3. Add the ground coriander, ground cumin, paprika,
garam masala and turmeric,
4. Cook another 2 minutes. Be careful not to burn the
spices!
5. Add the canned tomatoes, a half of a cup of water
and bring to boil,
6. Add cooked chickpea (previously soaked and
cooked -I added not cooked and it took me about an hour for chickpea to
soften), and cook for about 20-25 minutes,
7. Season to taste with salt, pepper, sugar and lemon juice.
Serve in a bowl topped with chopped coriander - I
served it over whole wheat pasta;)
